Bottling 3 week old ale

Post by AT » Sun May 04, 2008 11:58 am

I was planning on kegging my Fools Gold but i'm out of gas and can't get a replacement until Thursday evening so i'd like to bottle it to free up one of my fermenters so i can try to squeeze in a Choc Treacle Stout tomorrow :D
Like i said it's been in the fermenter 3 weeks and i suspect the T58 is not up to much now, so if i add more yeast along with the priming sugar an hour before bottling will it be ok? Also how much yeast should i add?

I was listening to a Basic Brewing Radio, and there was mention on a recent podcast(04-17-08 choc beer episode) that for a US 5 gal batch using 1gram of US-05 to half a cup of sugar.
If that is any use AT :=P

I have bottled plenty of tims with beer that sat in the fermenter for 3 weeks sometimes 1/2 of that time at around 5c and have had enough yeasties to carbonate my bottles but I usually let them sit 2 to 3 weeks in the botle as well.

I already have it done, 1 gram of uso5. It was a waste of time cause i pulled a heap of t58 into the bottles  well you live and learn. Probably won't happen again cause i hate bottling
