rapid cooling?

Hey guys, just another ridiculous question

I was just going over the technique section on this site and noticed that Jim lets the wort sit for half an hour after boiling and then proceeds with "quick" cooling.

Is this half hour rest period necessary?? What would be possible negative aspects of cooling the wort immediately after boiling?

any help would be much appreciated

I,m really no expert on this but i cool immediately after boiling and once the temp is around 24°C i turn off the cooler and let the wory settle for 15-30 mins. As far as i can see this allows the break materials to settle before you run off. I may be wrong :!:

I believe Jim uses a CFC so a rest period allows the hops to sink and form a filter bed :wink:

Correct. You can only cool straight away if you use an immersion chiller.

I use an immersion chiller with regular tap water put through it for about 15 minutes. Then I switch on a submersible water pump that pumps ice water through. Clear worts, virtually no trub.

Does that mean the colder the wort the clearer it should be :?:
