Maris otter or golden promise? for 80 Shilling

Brewing an 80 shilling will it make much difference if I use golden promise or Maris otter

I brewed a Deuchars clone with GP which the commercial version supposedly uses, and then later I brewed another batch using MO,

I couldn't taste any difference, I'm pretty good recognising hops but maybe when it comes to malt I have an uneducated palate

I don't know whether with an 80/- brew the malt choice is more important as it is a predominately malty brew, Rab Maxwell would be the guy to give you the answer on that one as he brews them regulary.

I don't think Deuchars is golden promise. Appareantly there's not a lot of it grown any more and even Caledonians beer called 'Golden Promise' makes no claims as to which barley it's made from on the label.

I would use the Golden Promise malt & if you are going to use Marris/ Warminster floor malted Marris is good don't like Muntons Marris very well just isn't malty enough for scottish ales.I just about only make scottish ales these day's yum-yum.The key to scottish ales in my opinion is soft water & lots of kettle caramelisation i boil most for about 150 mins + reduce around 5 gallons of the first runnings down to about 3 litres for a 120 litre brew.It costs a lot more for gas using long boils but i use less hops so it probably evens the cost out against brewing bitters ect.What 80 shilling recipe are you going to use nowacki

I've dabbled with both GP and MO and have noticed slight variations in flavor. It's getting harder to get GP at a reasonable price over here, so I have pretty much moved to MO as my base malt.
I agree with Rab, go for the GP if you can get it.
And there are a few fantastic 80/- recipes on this board.

I was gonna have a go at the following not sure what yeast to use

That looks similar to Wheelers Caledonian 80 Shilling not a bad beer although haven't made it for a while .I get good results with safale 05 yeast in Scottish ales but mash at 67-68oc to add more dextrins.Mr Wheelers Belhaven 80 shilling is exceptional also his Borve Ale is exceptional .His old book Home Brewing has Scottish heavy & Scottish light that are pretty good also :)

Safale 04 would do but it's more suited to english ales 05 isn't really a scottish ale yeast either but it's a very clean yeast the high mash temperature & the amount of crystal & chocolate malt in your recipe will stop it attenuating too far.You also have the options of liquid yeasts WL Edinburgh ale Yeast & Wyeast Scottish Ale 1728

I use 20 oc when using safale 04 & 18 oc with safale 05.With safale 05 i recommend using Gelatin or Issinglass when finnished either in the fermenter or in the keg as it's a very poor clearer unless your going to bottle
