Gonna try a lager tomorrow am for a change and need a bit of help with hops.

2 gallon batch

1 kg british lager malt
1 kg munich malt
1 sachet of saflager s-23 yeast
i have northern brewer hops at 10.9% - how much hops do you think would be good?(also have golds,fugs and cascade)

also i have crystal malt and flaked maize - should i use any of these two?

mostly do bitters,milds,stouts,porters etc so should i do anything different for a lager?

Maybe someone can chime in here, but I've heard that S-23 is a horrible lager yeast. I have never used it, but I wouldn't want fruity esters in a lager. If you're pitching cold, I'd pitch 2 packs.

The lager recipe i use is one that Horden Hillbilly came up with and the wife loves it.

For a 23ltr brew i use
3Kg Lager malt
400g Flaked maize
400g Caramalt
400g Brewing sugar
70g Saaz hops for 60mins boil or IBU to 28

But working on what you have i have calculated for a 9 ltr brew length at 75% efficiency

2kg Lager Malt
1Kg Munich Malt
150g Flaked Maize
10g Northern Brewer @ 60mins

will give you an SG1079.42
Total IBUs: 28.65
BU:GU Ratio: 0.36

I think i would cut the grain down a bit as its gonna be a very high gravity
unless you want it so high of course.

If you cut the Lager Malt down to 1Kg you would end up with
an SG1054.41
Total IBUs: 29
BU:GU Ratio: 0.53

Sorry i misread your grainbill so go with 2nd set of figures #-o

Hmm, need something like ProMash to calculate IBU's - off the top of my head, around around 8-10g would probably work out about right.

What sort of lager are you trying to brew here? With 50% Munich and 2kg for 2 gallons it's going to be fairly strong and dark - a sort of German Doppelbock.

Just collected 3 gallons of nice clear wort and the boiler is heating up.
smells gorgeous!
just out of interest what does the falked maize contribute?
And how does British Lager Malt compare to pilsner?
Was gonna ferment in my kitchen cupboard where the temperature ranges from about 8-15 degrees.

I made a Munich Dunkel using S-23, and it's turned out as one of my better beers - the guys at LAB liked it, apart from complaints that it was "too roasty for the style".

Two packets rehydrated in a litre of wort, and there was so much yeast at the bottom of the bin when I racked it that I made a Schwarzbier the following week.

I haven't tried S-23 in a pale lager yet.

Bottled this one up this morning.
Crystal clear,hops are just right(cheers Barry!) and the initial taste is great.
I primed with a little sugar and i rekon when this one is carbonated it is gonna be a stunner.

Just cracked open my first bottle of this brew and its GREAT! :D
Its clear as a bell and the carbonation is just right.
Slight sweetness at the start,then a bit roasty and then the hops come in and round it off.
Another all grain success.
Thanks again for all the help.
I think i mite open another!!!
