bottling, fining

Hi guys, a little advice required. I’ve 5gal of Old ‘P’ resting in a polypin and I wish to bottle it. Fermentation is now complete, not swelling the top of the polypin (how’s that for scientific), what now? Would racking into another sterilized polypin, adding gelatine and priming sugar then bottling immediately be correct? Or should I fine it, leave for a while then prime it and bottle? By the way, I’m using Dr Oetker gelatine, can’t get Davis is that okay? I’ve always barrelled my beer before and never used finings, because I usually brew stout, I don’t bother, what you can’t see won’t hurt you, right?
