protafloc + SO4

Post by Ray Mason » Wed Jun 24, 2009 10:31 am

Hi guys, I’ve just started 5 gal of Black Bat and, for the first time, used protafloc and SO4 yeast. A few hours after pitching the yeast a thick, brown, gelatinous covering has developed on the top. A yeast head has now partly pushed this upward but under this head is still what resembles a partly coagulated jelly. It smells fine but is this correct and what do I do now? Should i skim or what? Thanks, Ray

Doing exactly what my last brew did - using Protafloc and S04! Sounds pretty standard behaviour anyway. Personally,I don't touch the head no matter what it's doing, unless it's really lively and needs battering into submission.

Protafloc as made all the protein coagulate together so that it drops out instead of dissolving in the beer causing haze. You could skim it if you like.
