1st AG Brew failure, 2nd looking more promising

After my first attempt seemed to have got itself infected, and was dumped, did my second one last Friday.

So all is looking good, put it in the ferm barrel Friday lunchtime, with the lid just resting on.

Tested it today, sg has dropped from 1045 to 1010. Mild foam and scum on the top, so here's my question, should I put it in the keg sooner rather than later, or should I leave it for a few more days?

It doesn't taste too bad either, no funny tcp taste :D

I'd be patient and leave it 10 days. let the yeast carry on doing the clean-up.

What yeast are you using?

I'm using sa-04. I was just worried as I'm using an open fermentation barrel, well with the lid resting on. And wasn't sure if the beer would get infected with the air gap. Bit cautious after having to tip my first brew down the drain.

For the brew that went wrong, I used muntons

It'll be fine. I just rest the lid lightly on my FV and I've never had a problem. In the old days I used to use a simple domestic plastic bucket without a lid and again never had a problem.

S04 for me always seems to burst into life almost immediately, then pop along like billy for 4 days. it then settles down quickly to 2/33 pops a minute in the airlock over the next day or so before gradually slowing down. However, even at 10 days it is still on a pop every couple of minutes. So, I'd leave it yet to let the yeast clean-up after itself and try not to worry about it.
