Infection or not?

Post by MartialAnt » Sun Aug 16, 2009 2:23 pm

I brewed a few weeks ago & i put it in secondary for a week, as you do. I saved my 3rd addition hop bag & added it to the FV of beer. Before i added it i boiled it for a few minutes in some of the beer to kill off any nasties, which there shouldnt have been as i stored it in the fridge in a sterilized Tupperware tub. After a week i looked into the FV & it looked infected on the surface like my AG#2 did. I tasted some & it was very very bitter. I also made a gallon in a DJ but that tasted fine. In fact i finished it in 1 sitting as it was nice.
Last week when i noticed it looked bad i removed the hop bag & blasted the FV with Co2 to kill the mould that was feasting on my beer to teach them a lesson. What i would benefit from it i dont know.
Ive now brought myself to pour it down the bog as i need the FV. As i carried it to the bathroom i disturbed the skin & now its broken up. I poured some & it tastes fine.

It doesnt smell of fungus so could it be break material from boiler in the 3rd bag? Although ive never had this before when adding a 3rd bag before.

Look at the pics & tell me what would you do.
Would you bottle it but make sure no bits get bottled. Or would you tip it?

So basically you don't really know if it was fungus. So....

I would rack it in to a keg or in to demijons. See how it tastes in a few more weeks. Bottling seems too much effort for the risk. I wouldn't bin it, if it tastes good it probably is.

It looked like fungus at the time.
By the time i'd finished fannying around & got it in the barrel most of the surface crud had sunk to the bottom of the FV so most of it has gone into the barrel.

Its been in a pressure barrel now for a week & the taste is nearly fine. Could do with a few more weeks to mature as its a little over bitter still.
