Yeast Selection

ordering up for second all grain brew, Fullers Discovery from G Wheelers book.
Used safale04 first allgrain for a rauchbier with good success, kegging half and bottling remainder. Would this yeast be suitable for Discovery or can anyone recommend anything more suitable.Priority though is quick clean ferment,thanks.

White labs English WLP002 or Wyeast London ESB 1968 are supposed to be Fullers stains. Recomend you to read up on liquid yeast first

Same as Dennis, you won't get the right flavour with S04. Try his suggestions for the liquid stuff.

have looked at wyeast esb strain but was worried about lower attenuation in a lighter weight beer and poorer flocculation as will be bottling some of this.
what do you reckon on Gervin english ale yeast.

Never tried Gervin but have used both the liquids many times with good results. personally found them both well balanced yeast.

MAybe use the Fuller's strains (WL or Wyeast) and just drop your mash temp by a degree or two for extra dryness. Or sub maybe 5% or your malt bill for sugar?

Gervin is the same as Nottingham. It is a neutral flavoured yeast and will attenuate slightly better than S-04 and flocculate almost as well.

I have used the liquid pouches a few times and they deliver great results. Require more work though if you dont wanna spend 6/7 quid a go on yeast. I make up a small batch around 5l, let it ferment for just less than 24 hours. Fill 2 x 2l PET botles to about 2/3 full and stick them in the fridge for next time. Then dump a fresh batch of wort onto whats left to be fermented out.

Next 2 batches you just have to remember to take the starter out of the fridge in good time to allow it to wake up

I get 6 brews from 1 whitelabs tube
