Two Day AG question!

Hi .. It's difficult to find time at the moment for a 6hr AG brew. Does anybody know of any problems with mashing & collecting the wort then boiling the next day.? Thanks in advance. :D

Keep it sanitised and ideally store it in a polypin with all the air squeezed out and it will be fine. Even without the polypin you'll get away with it overnight.

If you keep it insulated too you might save a bit of time with the heating up again the next day.

Always worth holding the wort at over 80C for 15 minutes or so in the boiler to ensure no more enzymic activity takes place. Theoritcally the heat of the sparge water should do this, but as you wont be boiling until the next day its worthwhile practise.
