Perle Witch?
Perle Witch?
I've not heard much good said about these hops but I have some and I'd like to use them up. I'm brewing a recipe along the lines of wheelers pendle witches' brew and thought about chucking them in for the bittering as this will impart the least flavour. Plus I only have 100g fuggles. The recipe is going to be scaled up to 52L with the following hops:-
90mins
100g perle 6.9aa
40g fuggles 4.4aa
15mins
40g fuggles
steep
20g fuggles
Anyone think this is a bad idea?

A fine beer may be judged with only one sip, but it's better to be thoroughly sure.

Yes I read those posts, I'm sure he like them really

Re: Perle Witch?
I've asked a stupid question haven't I? I guess I either take a risk or chuck them out.....
I also have susan hops to use

Re: Perle Witch?
Do a smaller batch? 52L is quite a lot of beer to throw away if you don't like it...
Re: Perle Witch?
Thanks for the reply. I know you're right of course but I haven't done a brew in 6 months now, I've been too busy, so I want to capatilise by making as much as possible. The malt I have is a yr old so I've already got bad vibes about the outcome. Still it surely couldn't taste as bad as commercial lager....could it??!
I think I'll probably substitute using the boadicea hops I have instead.

Re: Perle Witch?
Don't do it
If you are boiling them for 90 mins from what i gather they will lose a lot of what i consider to be their undesirble qualities. Hopefully it'll work out well, keep us posted on how it tastes.

After a search on Perle hops it was your comments that gave me doubts. I don't want my first brew in 6 months to be a disaster, I have other hops to use. Mind you I do like a challenge...........Arggh! Desicions, decisions, I guess I'll decide tomorrow. If I'm pissed before the first hopping they may end up in the brew but for now I'm thinking of using using the boadicea which I would imagine will work out well.
Mind you any thoughts about susan hops anyone??

Re: Perle Witch?
Well I bit the bullet with the perle, I added some progress in as well because they needed using. I have fingers and toes crossed for this one. The recipe ended up as:-
Target 52L @ 1050
10.28Kg Marris Otter
0.55Kg Wheat malt
0.55Kg Crystal malt
90mins
70g Perle 6.9aa
40g Progress 5.4aa
30g Fuggles 4.4aa
15mins
50g Fuggles
Steep
20g Fuggles
I got a better mash efficiency and more evaporation than I estimated so I overshot my OG and got about 50L @ 1054.

Re: Perle Witch?
The harshness i experience from using perle seems to be accentuated when they are used for flavouring additions as per the many SNPA recipes that do the rounds, when added at 90 mins it seems to iron out the harshness to some extent, that said i still don't care for them much, but not everybodys tastes are the same.mooj wrote:You are winding me up nowdelboy wrote:Hopefully it'll work out well

Re: Perle Witch?
Thanks for the reassurance
I know they lose their flavour the longer they are boiled but I still haven't worked out how much flavour is lost. As a comparison I will do a mini brew sometime using them as the flavouring hop so I can see how I rate them - I have 130g left.....

Re: Perle Witch?
I used a 100g of these in a 25 litre batch of 4.6 ABV, 35 IBU beer as follows:mooj wrote:

Bittered with fuggles and EKG FWH, then 35g Susan at 10 min, 50g Susan at 1 min and the rest of the pack (15g) at flameout. It was good beer, but absolutely no hop aroma whatsoever!!
I would use them for bittering only.

Re: Perle Witch?
Cheers for the advice jubby. Strange having no aroma, I would have expected loads from that hopping schedule, I'll stick to using them for bittering.
