Re-pitching yeast

Post by casbar » Wed Sep 16, 2009 9:56 am

Thinking about re-pitching onto a safeale 04 yeast cake that has been used. If the primary fermintation barrel has had finings in it, will that make the yeast cake unsuitable for re-pitching?

Cheers :D

I wouldn't think so... don't quote me on that.

But I think finings just help with the folculation of the yeast so shouldn't be too much of an issue.

What sort of finings did you use?

I would be wary personally!

Someone on here recently, I'm sure he's a pro brewer, said that isinglass makes the yeast cell walls rupture after 8 weeks

I would have thought the finings would generally interupt with what the yeast need to do to reproduce and move around freely, might be talking out my arse though

Without knowing for sure scientifically the logic is sound on what you're saying Mys. From what I know of the stuff its designed to cling to the yeast cells, giving them the extra weight to sink them to the bottom alot quicker. Makes sense the yeasties would have trouble moving around after that.

After a quick google. Isinglass aparently is some sort of very pure type of gelatin.

I assumed that litterally it was just helping yeast cells together due to its sticky gelatenous nature.

You could wash the yeast.

Or could decant and resuspend the yeast, the yeast cells which fall first would be bound to the fining.

I dont have any experience of any of this though.

Mabye somebody who does will come along.

Thanks for the replies, think I'll play it safe and use a fresh pack of yeast.
