10 gal Pale Ale - 1/2 Kit, 1/2 All-Grain

I have recently started to brew all-grain but I still have a Coopers Pale Ale Kit with a can of Coopers Light LME in my fridge.
I have the 10 gallon brewery from Hop & Grape which I'd like to make a 10 gallon brew with. I've only done one 5 gallon brew so far with it.
Would it be worth it to try and make a brew from the kit and LME and add this to a 5 gallon all-grain pale ale recipe to make 10 gallons. Silly idea?? I know the quality wouldn't be quite as good as a pure all-grain recipe, but it would likely turn out better than just the kit on it's own.
If I did this, would I just add the cans of malt to the end of the boil and add extra cold water to 10 gallons. I suppose this would be good for cooling the wort aswel.
I want to try a 10 gallon brew but don't really fancy having to mash twice so this would be ideal.
I would buy some new yeast suitable for a pale ale as I can no longer get hold of the Coopers Pale Ale stubbies to reculture the yeast. Then I could keep the kit yeast for another brew as I believe Coopers use S-04 or similar which is good for some other brews I have on my to-do list.

I can't think of any reason that this wouldn't work. A lot of brewers add both forms of extract to either make a larger or stronger batch than what they usually do. And it doesn't mean it won't be just as good as all grain. I see the results of a lot of compititions where brews with extract score just as well.

How about this recipe I just made up? Sound any good? I'm not exactly used to making my own recipes up but I looked at some pale ale recipes for reference and came up with the following. Hopefully using the kit as well will not add too much to the bitterness levels. I was planning on mashing the Maris Otter and speciality grains, then adding some liquid malt to the boiler and all the hops and sugar. Then adding the kit at the end of the boil and topping up to 50L with treated cold water. Does that sound ok? Will adding cold water give me a good cold break? Or should I boil the whole lot and then cool with my immersion chiller? What would be best for clarity of the final product? So many questions........... I know it's a bit experimental but ideally I'd like to end up with 50L of nice beer. :beer:

First Gold Whole 7.5 % 90 mins 50 grams 41.7%

I'll add some Protofloc for last 15mins of boil and use the Coopers kit yeast but make a starter out of it to get the numbers up.

Total Liquor: 65.5 Litres
Mash Liquor: 12.5 Litres
Mash Efficiency: 80 %
