Grain 'use by'.

How long can i keep grains for befor using them?

I have a sealed bag of pale malt/vienna mix, and seperate carapils and crystal for a common beer that, for some reason, i bought waaaay befor i plan to brew it. (Half the pleasure of this hobby is bloody buying things!)

Also,anyone got a recipe for a cherry wheat beer, partial mash using a cherry extract?

Kept in an air-tight container in a cool, dry place I'd be happy to use malt purchased 12 months before. I often use Black Malt for colour; no more than about 20g per brew. As it comes in a 500g bag it tends to hang around a fair while!

There was a post on an American forum the other day from a worried brewer who had just crushed his grains but then got called away and couldn't use them for a couple of days, he was wondering if they would be ok :)

They do have a tendency to fret over nothing. Even quite a lot of the experinced brewers on the american homebrew sites talk about using grains withing weeks, despite people chirping in (usually from this side of the pond) about using grain thats over a year old with no problems.

exactly, plus if they are crushed, who's to say how long have they been sitting at the maltsters?

if they are kept dry and with as much air squashed out, they should last a year
