Moorhouses Pendle Witches Brew GW recipe opinion

Post by Brownster » Fri Oct 09, 2009 4:24 pm

Hi All,
I know everyone's taste is different so it's very subjective to ask but, anyone brewed this recipe from the GW book? If so what did you think was you impressed?
I typically like hoppy beers and I also like those which can be rather bitter and those that are just well balanced, things like TT landlord, Deuchars IPA, Golden Newt, Harvey's sussex best (I could go on!)
The post boil hops suggest to me it should have a good hop character / aroma, at least that's what I'm hoping :)
So far I have had nothing but success with recipes from this book, a credit to GW. The description of the beer sounds great and though I think I have tried the commercial version in the past, I can't remember it now...

I am also interested in any feedback as I am thinking of brewing this for Christmas and need to get an order in for supplies in the next week or so.

Thanks

Grahams recipe only uses Fuggles but all the other recipies use Goldings and Fuggles.

Have brewed the 1050OG recipe from GW's earlier book eleven times, so I guess you can gather that I like it. Bought a bottle of the commercial brew for comparison purposes and found that a bit darker in colour.

Brewed the new 1048OG version from the latest book on Monday this week. I note that GW has increased the Crystal Malt so it is a bit darker in colour and I guess a bit richer/sweeter in flavour. It's in the secondary FV now and will be bottled next week and I'll try it about 5 weeks from then. It does smell nice though.

Give it a go!

bugger! I brewed this from the new book and upped the grain to get it over 5%, I have the earlier edition of the book and never thought to look in there. Interesting to see the difference's. I can see I should have upped my hops too but we'll see what its like in a few weeks

Well it can't be bad if you have brewed it that many times :D I'm going to brew it this week, with brewing it so many times, did you experiment with different yeasts at all? I've got Nottingham which is pretty clean tasting.

Used a live brewery yeast for the 11 brews from the earlier book. For the latest used 15g of good old S-04 , for two reasons, as it's to be bottled I think S-04 sticks to the bottom of the bottle better than the other well used dried yeasts and it will leave some residual sweetness that suits the bottled version of the commercial brew.
I've got some Nottingham, Windsor and US-05 in the freezer, but prefer to use these on brews to be barreled. Others will disagree, it's just my personal preference.

It will be interesting to see what you think of your latest brew, being both the newer recipe and using SF04, see how it stacks up against your last brews. I'll see how it comes out with the Nottingham and post back!

Having just tried a bottle of the real stuff on Sunday; I preferred my own version to be honest from GWs book

Well I brewed it last night, finishing at about 9pm, one slight mistake as I over-diluted in the boiler before cooling; I ended up with 25 litres at 1046 as opposed to 23l at 1048. It tastes great and I'm hoping it won't make too much difference to the flavour.

I made a batch last week which is just finishing primary. I'm thinking about dry hopping in secondary for a few days. Has anybody any thoughts on dry hopping with fuggles? I don't know if it will impart too much of a grassy note :?

Where abouts in Kent are you? I'm in a brewshed somewhere between Rochester and West Malling.

Hi, I will certainly let you know what I think of it in a couple of weeks time no problem. I should bottle next Sunday ish and give it a week to gas up a bit before 'testing' one :)

You are not far from me then, I'm the other side of Rochester outside the village of Hoo. It would be interesting if they had a map thingy on JBK where people can put their location if they wanted.

I work on Medway City Estate so just down the road from you.

There's this topic from 2006 but I'm not sure if the map is working correctly now.
Have a look anyway...
