Safbrew WB-06 in an I.P.A.
I've just finished brewing another Deauchars I.P.A. Now I normally use a S-04 yeast in my brews, however I could only get hold of WB-06. The thing is will this wheat beer yeast dramatically change the taste of the brew? I'm thinking the brew could be a bit drier and maybe a bit cloudy but having only been an all grain brewer since April this year my knowledge of such matters are very limited.

I've only ever used it once in a Wheat Beer, which turned out as clear as a bell (against my wishes) WB06 apparently gives off a slight banana taste which I didnt really detect. I'm sure it'll be fine. Pretty sure it ended around the 1010 mark so wasnt that particularly low to finish.

Using WB-06 will produce a beer, but it won't be anything like the ones you have fermented with S-04. It will have a pronounced clove-like taste.
I would not use it. Save it for a wheat beer.
If it's all you have and there is no HBS close by be prepared for the clove twang.

Wait until you can get some s04

WB-06 will definitely ferment for you , BUT you are not going to get a IPA out of it. Better to leave the wheat yeast for a wheat beer unless of course you don't mind the different character that it is going to give your beer, a little clove and perhaps some banana depending on your temps. However if you are trying for a classic IPA then stick with S-04 or Nottingham or even S-33 which I like also.

I should have mentioned in my original post that I've already used the yeast
Oh well it's not the end of the world and will be a good learning curve for me i.e. the different flavours that yeasts can produce. I've got another packet of the stuff which I was going to use in my forthcoming Lemon Grass brew but maybe I'll use the 'Ale' yeast that my local shop sells.

UK-05 in an IPA, if you want to taste hops. If you want a muted hop profile, go with 04. WB-06 I wouldn't even consider.

I has a taste of the stuff this morning and it's certainly got a hint of Leffe about it.

I drank a bottle of the stuff last night ( 6 days after it was bottled ) and it certainly has more than a hint of bannana to it.
I was suprised at how well carbonated the beer is, so soon after it was bottled.

Just out of interest, what's the difference, beer wise, between UK-05 and US-05?

I tell you what, this is one interesting beer. It's the first beer I've made that has a peppery taste to it.
