carbonation question

Post by 400d » Thu Oct 22, 2009 8:56 pm

my beer is priming in bottles at quite a low temperature (15 - 17 C). I used 113 grams of table sugar boiled solution to prime it, which is a result that I got from an online calculator for 20 liters. It's in the bottles for 5 days now, and today I opened one bottle to try it. I have to say that I'm quite disappointed because it doesn't have a head at all. I can see some bubbles coming up from the bottom of the glass, but it's almost nothing. Do you think I should raise the temperature or I added too small amount of sugar?

I don't prime so have no idea about the rate but 5 days is nowhere near long enough, leave for a week warmish then transfer to a cooler place and sample again in 2-3 weeks.

yeah, but I'm afraid because I used safeale s-05 which is fermenting at min. 18 degrees. I have 15 - 17 degrees. I was thinking that it might be too low for yeast to consume the sugar inside...

15-17c will be fine, it'll still be working, but don't go any lower initially.

The low temperature will still work, but 20C would be better/quicker. Time will give better carbonation, but bottled beers will tend to have less head. Mine are sometimes too carbonated but still have no head!

This is weird. I consistently use approx 60g of priming sugar across 32-36 bottles, and never use 'head enhancing' ingredients such as torrefied wheat. I'd rate the resulting carbonation as low (ie there's only a subdued hiss when opening a bottle, the beer never tastes remotely fizzy and there's never a bubble to be seen rising in the glass). Regardless of yeast used,my ales have a good, tight head to start, which only dissipates slowly and clings firmly to the glass as it is emptied. Something in the water maybe???

you're trying to say that I did something wrong?? 113 grams of sugar is what online calculator suggested..... and it's been only 5 days from bottling....
