Late hopping at 80 deg

I've done a ton of searches but can't find what I'm looking for (altogether now... :lol: )
Could someone please try and explain the technique and timings for adding hops at 80 degrees using an immersion cooler?
Does the cold break occur at a higher or lower temperature than 80 deg?
Sorry if it's a silly question :oops:

Heres how I do it,

- Switch off boiler/turn off gas
- Turn IC on... monitor temperature, it will drop down to 80C very quickly. Turn IC off.
- Throw a charge of hops in, put the lid on, stir every so often.
- Leave it for 15 - 20 minutes or so
- Turn IC on and chill as normal

The break will coagulate as you get it down to the lower temperatures.

I was under the misunderstanding that it should be cooled right down immediately. #-o

You can do that if you like. Another common perception is that hops should be dumped in at the end of the boil and then chilled as rapidly as possible to 'lock in' hop character. Try both and see what you prefer. You might notice a few extra IBUs with the 80C method especially with high alpha hops (not worth worrying about). Allowing aroma hops to stew in the wort for a bit is a technique borrowed from commercial microbrewers (I think).

One reason you might want to chill rapidly post boil is if you're using pilsner malt/lager malt. DMS can form if you don't chill rapidly (not such a concern if you're doing a 90 min boil).
