Hot break

Post by jimw86 » Tue Nov 17, 2009 11:40 pm

Does anyone remove the scum during the hot break? A fellow brewer went to a micro brewery who did it and I tried it on my last brew, an adapted version of Dave Lines recipe for Tuborg. It came out really clear and the amount of hot break material seemed to be less than normal. So does anyone else do this and is it something that is recommended?

I skim the scum off of the top of the boil, I have been doing it so long now that I can't remember what my brews looked like before I began the practice #-o

I don't bother. I was lead to believe most of it was filtered by the hop bed on the bottom

I boil in a 40 litre electric urn which is probably a bit taller and thinner than an aluminium or ss pot used by the gas brigade, and I find that after a few minutes the scum migrates to the sides and sticks there as a 'collar', and gets marooned there as a furry ring when the wort level reduces during boiling.
Might give the skimming a go from now on, especially the evil grey looking component :D
