Stuck Brew - More Info?

Hi Guys,

I haven't myself had a stuck brew but was wondering would the beer be drinkable if it was? What would it taste like and what has or hasn't happened in the process. Quite interested in the science as to what is happening and was wondering if anyone had something interesting to say on it? :D

Stuck as in how? I'm guessing you mean stuck fermentation in which case anything upto about 1.018 I would be happy with. Generally the higher the final gravity the more body the beer has, though I wouldn't want to be any higher than 1.018 ideally as you're likely to be left with some residual sweetness which I don't think I would find nice in a bitter. :)

:D My Orfy's Hobgoblin got kinda stuck at 1020 and due to impatience I stuffed it into a bottle. Its bloody lovely now. It was just a bit too sweet to start with as the sugars hadnt been fully used up but after a bit of bottle conditioning it is very very drinkable indeed! :D
