I've got a cornie now, which I'm dying to fill with the Courage Directors that's sitting in the secondary at the mo. Problem is, it's sitting and sitting and sitting! Been in there for almost three weeks now, after a week in the primary and it's still gently bubbling away! (very gently, about six little 'islands' of bubbles on the surface, one blip through the airlock about every twenty minutes). I haven't checked the OG 'cos it's in a big glass carboy and I really don't want to disturb it until I have to, but I would like this to be ready for Christmas...would it be bad to drop in a Campden tablet, then stir in some geletine, give it a couple of days then keg up? Or should I just be patient?

Just because it's bubbling doesn't mean it's still fermenting. Take a gravity reading for two consecutive days. If there is no change in gravity, rack to keg. Usually after one week what you're seeing is co2 coming out of solution, not fermentation. You should have been drinking that beer over a week ago.

Ok, thanks. Will it have done it any harm being in the FV for so long? Looks nice and clean...

Got it in the keg today, little sip on the way in... the wait doesn't seem to have done any harm at all! Tastes great and is crystal clear!
