Get advice on making beer from raw ingredients (malt, hops, water and yeast)

Just tried my Westcoe IPA clone and it was so sweet it reminded me of a sherbet dip! Would it be worth boiling some bittering hops for an hour and adding to the corny? Or will it get better with age?

Yes, that will increase the bitterness alright, but are you sure it was fully fermented?

Adding a bit of hop oil would be easier if you have some.

I mashed at 69C............just seemed like a nice number. I was thinking of lactose. I haven't noticed it in the home brew stores. It seems more common in Canada and the USA. I'm sure I will find it somewhere.

Ive been trying to make a sweet beer for months..............how did you do it?
Could be due to a couple of things either;

The hops 30g challenger at 90 mins

25g cascade
25g mount hood
25g EKG

all at flame out and steeped for 20 mins at 80c

or fermentation - I used some recultureed yeast which didn't take so 4 days in I used some cheapo youngs yeast. It did drop to 1010.

I mashed as normal, 60 mins at 65c, using 4kg of m/o of the top of my head.

Will try boiling another 30 g of challenger for an hour and sticking it in the corny.

I think I need to wind my neck in on the hops. I do tend to add too much on occasions and probably mask the flavour of the malt....and the sweetness to a degree
