Hazy and flat

Post by quiff » Mon Nov 23, 2009 10:21 am

Tried AG1 for the first time at the weekend. It tasted really, really nice but was quite flat, didn't have much of a head on it and it was quite hazy almost cloudy. I used Nottingham yeast, 1 week in primary, 1 week in secondary then two weeks in the airing cupboard after bottling and 1 week in the garage. I suppose my question is: will it continue to carbonate in the garage at this tiome of year and should it be more ready for drinking at this stage?
AG2 went in the bottles yesterday and I would like to have them dinkable by christmas so any advice on improving the conditions for carbonation would be greatly appreciated.

Did you use any sugar in the bottles?

I use Nottingham in a primary for about 4-5 days then fine for 24 hours into a secondary. I then bottle with 1/4 to 1/2 tspn of sugar into bottle. Its ready to drink in like 7-10 days! Although obviously it tastes better after longer :D

What the others said.
Had a problem a while ago with a beer that finished. time never allowed me to bottle so it stood on the lees for about 2 weeks.

When i tapped it, it was crystal clear but after 3 weeks when it shoud have been drinkable it was flat.

Leave it in the warm for longer, then move it somewhere slightly cooler and see if it drops bright, try a bottle say in 2 weeks and if there is still no carbonation open reinocculate with yeast/sugar and recap.

cheers guys.
I struggle to get chance to brew or bottle during the week so I am restricted to weekends which means 1 week is too little fermenting time and 2 weeks is too long #-o
If bottling after two weeks is there an issue with me maybe adding a smidge of the slurry at the bottom of secondary fv to each of the bottles?
