marmalade???
Hi everyone i have a bit of a strange question.Iam making a powerfull I.P.A and i want to add a orange taste to this ale.Iam going to use hops to help with this orange taste but i was thinking of adding some organic marmalade to my FV vessel. Do you think that this would work? i have never used marmalade before in my brews and i thought this would be a good way of getting the orange taste into my brew, what do the experts think?

I'm sure it has been done (why don't we call it orange jam?
) I guess it will give something but I would be guessing at quantities and when to add it. I have use the zest of 4 oranges for the last 30 mins of the boil. I like cascade or amarillo hops in such a brew

Funny you should say that.
I had intended to add some sugar to my last brew, but found that someone had forgotten to buy sugar. We had a jar of marmalade that no-none was ever going to eat, so I whacked that in the boil.
The brew is fine, but doesn't have any orange taste.
For natural flavours to come through in a beer you really have to load it. I recommend the zest of fresh oranges, but you need a lot. I zested 6 oranges for my choc orange ale and it wasn't really very noticable. Zest at least 10, possibly 20, if you want an orange taste.

Hi and thanx for the advice, iam also thinking of adding some orange blossom to the boil and maybe some brupaks orange peel, what do you think? i was thinking of using crystal hop as a finishing hop with some first gold,amarillo as finishing and main boil hops to realy help with the orange taste.I thought the maramlade will just help with the orange taste.

To be honest, you would need to add so much marmalade to get a noticable flavour from it that you would probably be using about 2kg of sugar.
The brupaks stuff should do the trick but don't expect it to be that orangey.

To be honest the orange is going to be a scondery taste, but i think if i add orange blossom,brupaks oranage peel, also the orangey hops it should all add up and give that orangey secondery taste i hope.

I once added 1lb of black treacle (instead of Golden Syrup) and got orange (colour) Beer
the flavour was different too

Yeah, black treacle's great in beers, and the flavour does come through quite nicely too.
