I asked these same questions whilst spending the day in a professional brewery recently. The head brewer informed me that there is no advantage of a 90min mash and that 60min is the optimal time used across the board for a standard 1 stage mash. He also stated that a 90min boil is better than a 60, Hope this helps

I've got into the habbit of doing a 90min Mash and a 60min boil, I think the 90min Mash just makes sure the enzymes get all the conversion done with that amount of time. :)

60 minute mash and a 60 minute boil for me.

The shorter boil costs a bit more in hops, but saves in electricity.

60 min mash and 90 min boil here.

I found that i got cloudy beer with a 60 min boil, since moving to 90 mins it's been lovely and clear.
