Reading from Brupaks site this is for colour adjustment. Reading from DD Williamson site (a manufacturer) brewing caramel comes in different shades from 19000EBC to 30k+, and has a flavour contribution. Suggested dosage for a 'traditional' beer (whatever that means) about 0.02% so 4.6mls in 23L? Anyone got info on this especially dosing rates?

We dont state an officail dosing rate of Caramels or Syrups as it smore to do with lt degrees per Kilo that the breweries are after, extract etc

You are stuffed without the EBC number. The home brewing industry excels at this sort of nonsense.

Assuming that you have 35,000 EBC caramel and you want to add 5 EBC colour to 23 litres of beer = (5/35000) * 23 = 3.3 millilitre (0.014%).

You would probably be better off using black or chocolate malt.

Thanks Graham. Any flavour contribution at this level in your opinion? Here's the recipe I'm planning on doing once I've got the Barley Crusher from the wife I bought myself at Christmas :roll: :wink:

15.00 gm Goldings, East Kent [4.60 %] (15 min) Hops 3.5 IBU

Est Original Gravity: 1.042 SG
Est Final Gravity: 1.009 SG
Estimated Alcohol by Vol: 4.30 %
Bitterness: 29.0 IBU
Est Color: 48.9 EBC

The guy at the brewery told me they use brewers caramel as well. This is an old ale too, so presumably a goodly bit of ageing required for all those dark grains?

No, I do not think that there will be any flavour contribution.

Mind you, 760 grammes of 400 EBC crystal malt is going to make the beer pretty dark anyway. I reckon the beer is going to be closer to 100 EBC than 49 EBC, you won't be needing the caramel; you wont be able to see through it as it is.
