Yeast Nutrients

Post by Deebee » Tue Jan 12, 2010 10:57 am

Hi all.

I have a starter on the go for a brew that i have planned.

I am toying with the idea og putting soe yeast nutrients in the mix too.

I wonder if i could put bread yeast 8 for example) in the boil and if the dead cells would act as a nutrient for the active yeasT

Sounds like cannibalism  !

I've never used nutrients in beer, but when I make 'country wines' for the missus I chuck some stuff called Tronozymol in. The difference with and without it couldn't be greater. Can't see why it wouldn't do the same for beer,if the need arose.

Should be fine I reckon - it's all yeast and it's great nutrient when boiled up - old yeast cake is good to use for this as otherwise it often goes down the sink anyhow. Either that or use yeast-vit or similar.

The big reason why nutrient makes such a difference with wines is that the must has very little in the way of nutrients - country wines are mostly sugar and water - unlike wort which has lots of nutrients for yeast growth from the malt itself.

In a perfect world a decent wort should have it needs in terms of nutrients, extract worts could be more yeast friendly with some help.
Yeast nutrients (there are a number of "brands") will typicaly contain some dead yeast, some DAP, some Zinc and and other.
Though we do not live in a perfect world our beers will be quite fine without yeast nutrient, however, a little bit goes a long way and a decent yeast nutrient really may make difference between a good and great beer.
