Hi, I am thinking of undertaking a two stage brew over Sunday and Monday evenings.
I was thinking of mashing and sparging on Sunday and boiling and cooling on Monday. Would there be a problem leaving the wort during Monday?

Simple answer, no.
Many here have done it without issue. The only drawback is the energy required to get to the boil which is obviously much less when the wort is +60c but other than that no, it'll be fine.

Cheers, that's good to know.
I'm not too worried about the extra power I'll use. It will just be great to get a few midweek brews under my belt to save time at the weekends.

After sparging, hold the wort at 85-90C for about 15 minutes before calling it a night. This will kill off the enzymes which allow further starch conversions taking place.
