lager - Diacetyl Rest

Post by sam c » Sat Jan 23, 2010 7:50 pm

so ive had my oktoberfest on the go for a week now. i pitched 2 packs of w 34/70 @ 20 c and left over night to get going. then i cooled it down to about 13 c - 14 c from then on. it has now reached 1.016. would this be a good time to bring the temp up a little for the Diacetyl Rest? is 16 c going to be ok?

thanks

Let it warm up to room temp for a day or so. It should finish off and clean itself up.

ok thanks.

ive just moved it into the down stairs loo which is about 16 c -17 c at the moment and i shall leave it there till it finishes.

one more question. what i plan to do next is rack to a secondary and then leave it for a week as cold as possible and then prime and bottle and lager it in bottles at as cold as possible for a couple of months( with a few cheecky tasters :D ). so when the beer is in secondary it will be around 4 c. after priming and bottling when the beer is that cold will it wake back up when i leave the bottles in the warm for a week as per usual?

cheers

I would leave the primed bottles out at room temp for a couple of weeks. This will insure you get some condition. Once they're conditioned, cool 'em down.
