Hi All
I'm going to do my first brew since last June and starting off with a guiness clone from BYOBRA. I have some chocolate malt that I thought I might add to the recipe to give it a bit of a different flavour. My question is how much should I add and what should I replace in the recipe with it. For those that don't know the listed recipe only contains Pale malt, flaked barley and roasted barley.
Thanks
Michael

I wouldnt bother because it has so much flavour from the roast Barley you will never notice a small amount of Chcolate Malt. Save it for a Hobgoblin Clone or simalar

If you want to brew beer that doesn't taste like Guinness it seems a bit odd to start with a Guinness recipe.
Best wishes

its not that I want to brew a beer that doesn't taste like guinness, just looking at what I have in the cupboard and what might add to it. Can't say I've had many pints of Guinness that consistently taste the same as each other anyway.
Guess I will stick with the recipe in the book then and keep the chocolate malt for something else.
Thanks, Michael

So the 440g of Roast barley in Guinness (23litre brew) could be halved and replaced with 220g of Chocolate malt... should make a nice stout.
Use some late hops at 15mins to add that little extra more
(Challenger, EKG, Fuggles, or a combo of all three)
You could substitute 200g of the Flaked barley for some Crystal malt too

Cheers pdtnc, thats the sort of thing I was hoping to hear, and all three of those hops I have. I have enough grain to make two batches so maybe I will make a standard batch and a modified batch. Not looking forward to having to sterilse 80 bottles though (did enjoy emptying them all over Christmas in preparation for refilling
).
Any suggestions as to amounts of hops? just guessing myself but how about 10 - 15g in total of the other three or would that be too much? Just flicking through the book and late hops seem to be of that sort of amount.
Thanks, Michael

I've recommended this recipe lots on here:
Hopback Entire Stout:
http://www.hopandgrain.com/recipeSearch ... re%20Stout
Its a good place to start for a complex and drinkable stout.

thanks, that looks the ticket. Not sure I will get it on this weekend but hopefully the following weekend - and it should be ready to drink just about in time for the France England 6 Nations game at the end of March
