Hello looking for some help

I have just done this beer og 1080 26 litres made with 85% pale malt and 15% crystal. It was mashed at 66 c, no problems with the mash or boil.

I used 2 packets of windsor yeast once pitched 24 hours later was fermenting like mad , however after 4 days things came to a halt gravity at this point 1030. I have roused it a few times to get things going again which did nothing, also took some of the wort out re arrated it and pitched a packet of safale english ale yeast into that which was fermenting well after 24 hours , pitched that back into the main batch and again nothing . Its now been in FV for 8 days.

Now would yeast nutrient help, or maybe re airate the whole batch. Also was windsor the wrong choice of yest to start with in the first place ?

Any suggestions woiuld be great

DBE (Dry Beer Enzyme) is a bit of a last ditch attempt which I dont really advocate, purely because you'll end up with a low SG. But it does what it says on the tin (or sachet in this case)

I'm not a fan of Windsor because of the problems I've had with stuck fermentations with it. Alot of people use it and love it and I do appreciate what it brings to a darker brew but I tend to steer away from it! Also not sure how well it performs in a high gravity ale.

Not sure where you get your main supplies from but most homebrew shops stock it.

If Windsor got it down to 1030 whats the SG now after using Safale 04? Also may be worth checking temperatures etc.

You've already got 61% attenuation. With that amount of crystal and that yeast, my guess is the yeast is done, unless you pitch something else. What you've got right now is a 6.6% abv., sweet, beer. You may want to pitch some Nottingham, but then that might really
dry it out.

Time for an update.

It has been nearly 2 weeks now and still stuck at 1030. Not had much time to look into this dry beer enzime stuff.

I did a test brew of this beer same % of ingrediants but a lower gravity of 1060 using windsor and that fertmented out to 1012.

Would some yeast nutient help as I have some youngs yeast nutrient ?

Pops homebrew shop in Cheltenham should have DBE - ring him first to check - he's very helpful.

Thanks sking. Not had time to have a chat with him yet hes been a mate of mine for years now.

Where abouts in gloucester are you from then?

Since my last post there are some white spots across the top of the beer hopefully this aint mold. This beer is starting to peee me of no end.

A further up date. Its now been 3 weeks .Saturday I got some Brupacks yeast vit and some of this dry beer enzyme. I was hopeing not to use the DBE so put some yest vit in and gave it a really good stir. Come Monday morning nothing happening still gravity at 1030.

Put one sachet of the DBE in gave it a good stir and by the end of the day its started fermenting again .

Will I have any problems conditioning in the barrel now if the DBE uses up all the fermentable and unfermentablwe dextrins. Was going to eventually bottle this for x mas this year.

Also what does this DBE exactly do ?
