I had a very smooth mash and sparge last night and I'm going to be boiling and chilling tonight.
I cooled the wort last night with my chiller and, this morning, when I transferred the wort from to boiler I noticed a bit of fine sediment at the bottom of the FV I was storing the wort in. Am I right in thinking I should chuck this sediment out (as it should have been removed when recirculating the initial runnings)? I am expecting there to be some more sediment there when I get back.
Just thought I should check before getting rid of it.

Why did you cool it last night? No point, you're going to boil it today! But yes, bin any sediment. It probably wont hurt, but the clearer your wort pre-boil, the better.

interestingly, I was advised to bring the wort up to 80 deg C in order for a particular process to take place (enzymic activity or something?) once I had sparged
Others chipped into the same thread, and suggested that they never did the 80 Deg C thing post sparge, and this never made a difference to the end product.

Either heating or cooling would likely do the trick - either denature the enzymes by heating, or take them below their operating temperature by cooling. Either way you are looking to stop conversion or you may be looking at a very fermentable but rather thin and bodiless wort.

I cooled it down last night to avoid it getting infected while cooling slowly. For my previous brew I heated the wort as was suggested but it added quite a bit of extra time and the wort looked pretty murky the following day. So I decided to cool it this time.
It's in the fermenter now and I hit the target OG and brewlength so hopefully it will be fine.
My best brew to date. Hopefully the results will match it and I'll be cracking open a keg of Batemans XXXB come Easter.
