chill haze and head retention

Post by keithshead » Fri Mar 26, 2010 7:52 am

Does torrified wheat create chill haze like flaked barley?

Generaly my head retention is good but the colder i have my beer the less head i have (CO2 going into solution). How can i reduce this without upping the temperature?

Not really, at 5% you shouldn't have much of an issue, but in theory you'll get some chill haze the more you use.

You could get a glass with an etching at the bottom or pour the beer a bit more aggressively.

Not in the quantities you'd use for head retention (usually around 3-5% of the grain bill).

What about carapils? - isnt that supposed to aid foaming and head retention? I've not used it in many ales and cant recall if it helped or not.

Yeah that does the job too, you get quite a creamy head with that.

I recently brewed a lager with quite a bit of carapils and that really keeps it's head. It's quite pricey though as it's imported from Germany.

I have accepted chill haze is just cosmetic and don't worry about it, as It doesn't present its self at ale serving temperatures (99% of my brews) the odd lager I do, I just put up with it. As for head.............I have never had a significant head on any of my bottled beers (haven't used a barrel for years) I also note that not many commercial bottled beers have anything like the head I would expect on a pub pint.
