Hey Steve, some micros I've been round cool their beers in secondary down to 11C for 3 or 4 days to drop the yeast.

Cooling will speed up yeast starting to settle out but if you want to clear the beer quick add some isinglass finings. 100mL of fresh good quality isinglass per 5 gallons/Cornie will clear the beer overnight.

Microbreweries cool at the end of fermentation to reduce yeast numbers but it is not a fast route to clear beer.

Gelatin works too. Just regular gelatin; no cherry Jello. :)
