Optic Malt - Flavour Profile

I've just made a summer ale with 97% optic pale malt and 3% flaked barley (for head retention).

I've noticed in the final beer that there's a strong honeycomb / honey flavour that borders on almost a plastic like flavour. This is the first beer I've done with a new plastic boiler tap and im wondering if the flavour is likely down to the tap or the malt. Has anyone else used optic before and noticed anything like this?

Am thinking of brewing Summer Lightning which uses only optic in the recipe...which i thought was a bit simple! Interested to try it though and think it'd be good if it gove a honey flavour...is it overpowering or a nice addition?
I cant imagine a plastic tap would addd anything to the taste of a beer..
