FV temperature drop steps

Im currently brewing a session beer (somewhere between a mild and a bitter) and am brewing it in my new fancy fermenting fridge with temp controller

I know in professional breweries they slowly drop the temperature over the fermenting period but what sort of schedule am i looking at? 1 degree a day?

I've not heard of that before. I thought that they tended to keep a constant temperature throughout the fermentation then crash cooled it at the end to drop all of the yeast out.

Dont they rasie the fermentation temps as it goes on in Belguim

Nor me. Step mashing when starting at a lower temp and stepping up due to a protein rest or whatever yes. Crash cooling yes but starting high and stepping down, erm, no, never heard of that. OK, I'm in, why would you do that then? ...give :wink:

I believe fullers giggle around with their FV temps. I think they go as low as 3.
Theres an interview with there hesd brewer on jamils can i brew it. Worth a download

Yes, but as mentioned above, I'd assume that is part of the cold-crashing process rather than gradually lowering the temperature while the yeast is still fermenting.

Yeah I heard both of the interviews with John Keeling (for the ESB and the London Pride). Man that bloke gave away all the details - I couldn't write quick enough :lol:

Fullers do lots of visits to various pubs around the country.They provide the beer and organised tastings.John or another of the fullers team are always there.
They done one near Derby a few months ago.Go to there website ,join the free club and you will get all info.
