Is this an infection?

Post by spook100 » Fri Aug 13, 2010 5:27 pm

Hi
I brewed my first all-grain batch three weeks ago and it has been sitting in the primary fermenter ever since. I hadn't opened the fermenter for a good week and when I checked today there was a white, waxy looking film floating on top. I first thought was that it was an infection but I sampled the beer and it tastes OK (very good actually). I racked the beer off to my other fermenter hoping to leave the substance behind but most of it mixed back into the beer even with the relatively minor disturbance of inserting the racking cane. Does anyone have any idea what this is? A benign infection? Dead yeast cells? Some sort of hop or grain residue?
The picture below is poor quality and was taken after I had disturbed the beer a little so the substance looks quite broken up lumpy, it was initially a very thin film covering most of the surface uniformly.
Thanks

A fine beer may be judged with only one sip, but it's better to be thoroughly sure.

It looks like a wild yeast infection to me, as long as your happy with the taste I wouldn't worry too much, make sure you use plenty of sanitiser on your FV for your next brew and use an airlock so it doesn't happen again. Wild yeast is very common at this time of year.

I've had infections like that. A thin and fragile white film on the surface. You'll need to drink the beer quickly until it's unpalatable, still useful in cooking thereafter.

Had something similar a while back. My mate brewed the exact same recipe on the same day and when we compared brews (even on Wed past) there were no off flavours. Both beers were identical.

It actually carried on into the bottles but I gave them a gentle shake and it fell out. After that it didn't return.

Hope this will be the case for you too!
