what is the smell of non fermenting wort?

Post by 400d » Mon Dec 13, 2010 5:14 pm

I have a batch that I brewed and pitched the yeast three days ago. It seems my yeast was dead and nothing happened after 72 hours. I pulled the sample and took a reading which was the same, so it's not fermenting, and it's not going to....

I just pitched new yeast and I hope it will start this time....

But what bothers me is the smell of this wort that was in the bucket for three days without fermentation....

It smells really bad. Not even close to a fermenting beer.... Is this normal?

If it smells bad....good chance that something is already working on it, even if the reading is the same. Wait and see what the new yeast does to it, but I'd not be too hopeful.

I think i'd have boiled it quickly again after 3 days without fermenting.

As for fermentation, listen to the hydrometer.
As for infection, listen to your taste buds.

"bad" is maybe too much. "weird" is much more appropriate.... but I can't describe the smell because it's really strange.... it seems all the hops disappeared and what should be malty became really strange. I can't feel anything moldy or vinegary - it's like bread kept in a plastic box for three days....
