hi all, after a couple of years making extract brews i am moving to all grain , enough of that on other posts. I was wondering about making a super strength brew and wanted to know the best way to do this, do you add all the sugars at beginning or feed the fermenting wort as it goes along, would be grateful of any feedback.

How high do you want the gravity to be?

I generally estimate 1kg of grain per 1% ABV. You may want to increase the mash by 1 or 2 degrees to improve efficiency. I don't add any additional sugar and let the grain do all the work. Good luck with it. :)

If you are going strong I would use the sugar route as it will be strong without being too sweet with the unfermented maltodextrin thingys, I seem to remember a beer called tower of strength from the tower brewery that does about 8% but tastes like 5 as it uses sugar and is well balance a difficult trick, very quauffable till you fall over
