Priming with honey?

Post by Mountain » Sat Mar 12, 2011 5:35 pm

Hi,

I've just syphoned a batch of honey and orange wheatbeer into secondary. Tastes very good but I'd like a little more honey to counter the Curacao peel I used. I've done quite a few beers with honey and all seem to turn out fine. I add the honey after the boil for maximum honeyness! I did a great beer with Tasmanian Leatherwood honey which has a good vanilla flavour. Orangeblossom honey obviously works well with a wheatbeer.....anyway...

Anyone, ever primed with honey?
I think it may be a good way to preserve the flavour of the honey as it will be added prior to bottling.

Thanks

You can prime with anything that is fermentable. Some honey ferments completely so priming with it might not add a lot of honeyness. When I brew a honey beer I usually add some honeymalt.
I'm just here for the beer.

Honeymalt! Sounds good. I haven't seen it in the UK.

I might just try priming with honey purely as an experiment.......just a few bottles first time maybe.

Hi Mountain, sorry to hijack the thread but have you published your honey and orange wheatbeer recipe? I made an orange and cinnamon mead over Xmas and it's lovely. Making beer out of honey would be even better I'm sure. :)

I've put honey in a lot of my beers and they all turned out good...I seem to be lucky with honey beers :)

Nice simple one!

For 19L

2kg wheat malt
2kg lager malt

5g Mag Sulphate

30g Crystal hops (20g 60 mins, 10g 15mins)
I added about 15g of 'bits left in the bags' hops to use some odds & sods up too!!

15g bitter orange peel-curacao 15mins before end.
2x 225g Romanian Sunflower honey from Asda- purely because it looked really yellow. Good choice as was very citrusy. Added when I turned the heat off.

Danstar Munich WB yeast (took off like a rocket!!)

The mead sounds great....will have to try some.
I've been interested in something called T'ej from Ethiopia which is apparently a sort of mead beer made from grain and honey. Sounds interesting.

I've primed with honey to good effect before.
It was back in my kit days, I had hacked a coopers lager kit with all added fermentables being honey.
I primed with 150g of honey as far as I remember for 23L.
Honey isnt as fermenable as sugar, so I used a little more than sugar

I have boiled, fermented, primed, juggled and massaged with honey........sadly, I have never been able to retain as much honey flavour as I would have liked :(

well that brew I mentioned above trucker was very dissapointing, so much so I ended up leaving to one side (was also my last kit brew before AG)
It must have been sitting there 4 months or more.
Was out doing something or other in the brewery (shed) one evening and grabbed a bottle of beer without looking at what I was picking up. Man the difference was unreal, there was honey where there hadn't been before, mot sure thats the key, but it sure helped in this case.
