I'm going to brew a wit on Saturday and what I have planned for the mash is:
Batch size: 10l
0.95kg Pilsner malt (43%)
0.1kg Munich 4.5%
0.95kg Flaked wheat (43%)
0.22kg Flaked oats (9.9%)
I've been reading up various things about making wits and generally using flaked (unmalted) wheat. Unfortunately I've not yet come to any conclusion as to whether I can just mash as normal or if I have to do a separate cereal mash for the wheat and oats. Any thoughts?
Also on the coriander - what I've read in a couple of places is 1.8g/litre, which means 18g for me. That sounds like a LOT of coriander - does that seem about right? Another place told me 0.125tsp coriander for a 10l batch, which is way less than 18g I'm sure! I definitely don't want to screw up on the coriander so any thoughts are appreciated!
The secret ingredient - lime marmalade. I'm not sure how much yet but I'm planning on using that instead of the bitter orange.
I'm fermenting with WPL400 and am planning on targetting 23C for it.

If you have the ability to do a cereal mash then it will probably get you marginally better results. However, it is quite possible to make the recipe you have stated with a normal mash. Expect a lower efficiency, especially from the unmalted grains.
You can just use normal oranges if you don't want to use curacao peel. Marmalade will work to some extent though.

I did one with 24g of coriander and a jar of marmalade in 23 litres - I could hardly taste them after about three weeks in the bottle - but about 6 weeks after bottling they came through lovely. Don't know why this happened.

I'm already doing two brews on the same day and don't really know properly what a cereal mash entails, so if I can get away with a normal mash I'd rather do that rather than complicate things. I normally get about 76% efficiency, what do you think I'm likely to get out of this in a normal mash? I can adjust quantities based on that.

A whole jar of marmalade? Wow. I may need to look into that more then, I was thinking it would be a lot less than that. Do you think it was about right? This was my Wit beer brew last weekend, and although I did a step mash it really isn't required at all, a simple infusion mash at 64C will give good results. I must admit that I have been told to be very cautious with the coriander so wimped out at 10g in 65L, I did use 50g of Curaco orange peel in teh boil as well though.
Tasting so far (raw unfermented wort) shows that it is quite thick, slightly spicy, and sweet . . . . judging from teh lovely banana aroma I got from the yeast when I pitched it I am really looking forward to this in a couple of weeks.

That's in 23l, you're only making 10. Having used a jar of marmalade in 23l myself, i can say that i didn't find it added much. Perhaps use some fresh limes in a similar way i use oranges in a wit? Or just get all the zest off and add that.
