So long as they are kept dry and out of direct sunlight you really don't have to worry. I have seen Morris Hanbury's warehouse and they certainly don't freeze them! If I have opened them I use cling film and put them in an air tight-ish container.

I've not got a vac packer so after opening a pack i use those re-sealable sandwich bags and squeeze out what air I can. Then I put them in the freezer - at least i did until it went kaputt and now they're in the fridge.

I believe that storage issues (such as temperature) are more important once they've been opened, but I may be wrong - I've seen a number of home brew shops selling them loose in normal poly bags. So far I've avoided buying those so I can't say if its okay, perhaps I'm being over fussy.

I keep mine in separate zip lock bags, in sandwich boxes, in the coldest part of the fridge.
