Soy sauce smell and taste

Post by weiht » Tue Apr 26, 2011 10:30 am

I just tried a Japanese schwarzbier that had some soy sauce notes on the nose, and as a result made me perceive to have tasted some in the beer. It's a very nice beer actually, until someone highlighted that smell and I can't help to notice it. Anyone have experienced this in their home-brews? I have brewed a few batches of stouts and porter without problem, and I wish to find out what cause them so I can look out for things in future as it's something I definitely want to keep out of my beers

That could well be yeast autolysis, it sometimes tastes kinda bovrily, but you say Japanese? is it possible someone horsed a load of Kikkoman soy into it?
