bottles my nuclear atmosphere ipa 2 weeks ago now. last week i tried a bottle of each. one was bottled with s04 and one with US05 yeast. right here goes.
the US05 bottles were tasting very nice last week when i did a "PSSSSSSSSSSSSST" test (carbonation test) ok quite lively 50grams cane sugar
the S04 bottles were tasting ok but very very flat 60grams cane sugar
right this week another week later. i left the S04 for another week to see if it will carbonate up. and US05 was in the shed at about 15oc.
the US05 as gone very very cidery and tastes like shit.? are you suppose to drink high EBU'S/HOPPY beer early or leave for as long as possible?
the S04 is still not fizzy at all and the yeast is very lose in the bottles. taste is not cidery or bad. could drink a few already.
the recipe did use 300 grams of hops. simcoe, green bullet and pacific gem. 100+ EBU'S. will this affect the fizz?

i know it says 64 EBU'S. but i did change the recipe so slightly and i mash hopped and FWH. also chucked in 60grams of each hop in at 15mins? with brew mate it added up to 164 IBU'S?

What yeast was used to ferment the beer, and why did you add additional yeast, and two different strains when bottling?
As for the US05 and the cider taste, if it tastes like vinegar-cider it may be infected.
While you added an abundance of hops, most likely it is is not 100+ IBU/EBU that is just what your software is saying, and most likely the issues with carbonation and taste are related to factors other than the amount of hops you used. However hop-abundant beers are often consumed fresh before the hop flavours and aromas dissipate and the beer mellows out some.

sorry to cause some confusion i didnt bottle with different strains i fermeneted with s04 and us05 and bottled as normal. i did leave the s04 bottles in the warm for 2 weeks @ 21oc. and the uso5 bottles in the warm @ 21oc for a week. the s04 is not carbonated but i did use 60grams of sugar. and the us05 is carbonated and tastes like shit.
i dont think its really vinegary maybe it is maybe another bottle will confirm this. it tasted like cider to me

Perhaps it's very difficult to analyse that problem.
It is hard to think that using common dried yeasts of S04 and S05 with the same hopped wort could produce such diversely tasting end products as still cider and fizzy shit although temperature differences would normally cause some variations.
I've never knowingly drank a so called IPA that might be anything like the original product, most have been just a marginally more hopped beer. Recently I drank Punk IPA and some Green Bullet thing that were anything but marginal with respect to hop content and I must say they gave quite an experience, but one which I'm not so sure I'd queue to repeat nor would I expect hobbyists in 200 years wanting to replicate.
Maybe you could gather your brew and send it on a hot sea voyage for a month or two. Otherwise I think it's a case of wait to see what flavours do come with maturity. With that recipe I couldn't guess but maybe some will? You may still yet get your £30 worth.

must admit that was a stupid amount of hops. so next time i am going to use normal amounts and just not bother messing around with hop monsters

in the aspect of trial and error i am on my 5th bottle of this stuff now and the bad flavours was only in 2 of them. and the one from last night. the only thing i noticed the ones with the off flavours are the ones from just were my bottle capper broke and there not sealed right at all the lid is spinning on them. but the beer is still lively in them. but tatse rank!. the other bottles taste great with no off tastes just like before!

Did you remember to clean and Sterilise all your bottling stuff, Bottles, Caps, transfer piping, bottling buckets, bottling stick, boiled priming sugar etc? (Just a thought)
I'd say for 40L that 150g of late hops is not too much, I can easily finish a 23L brew with 100g of Flame-out hops.
Green Bullet hops can be pretty Pungent, like Bobek/Styrians on Steroids to my tastes, could take time to settle down to a more acceptable level.
