Long fermentation problems?

Post by ManxMan » Mon Nov 21, 2011 6:34 pm

I will be doing my last brew for about 6 weeks or more shortly as I'm having surgery to put my shoulder back together next week. ( bloody mountain bikes)
My question is, will a brew sit for that length of time before bottling without spoiling? Would there be any advantage in making something with higher O.G. and loads of hops like a big IPA? What about temp. keep the same all the way through?

I've often rack into a polypin after the primary fermentation is over and then leave it for 6 to 8 weeks; all without any problems. I have done this at varying temperatures as well but prefer to keep it a bit lower (10 to 12c) to allow everything to drop out. Shouldn't be a problem and especially with good IPA etc; it should mature beautifully. :D
If I had all the money I'd spent on brewing... I'd spend it on brewing!
