Flavourings
I was just wondering if it was possible to add some natural flavourings at the end of fermentation? I was thinking about putting in a bit of vanilla essence (just a few drops of the cooking stuff)?

You could try it but I'd go for a whole vanilla pod if I were you, either in the boil (if you're extract or all-grain) or soaked in a bit of rum/vodka for a day or so to sanitise it if you're doing kits and don't do a boil.

Flavourings are easy to overdo. I suggest you just try doctoring a few pints as you bottle them rather than risk a whole batch.
I find flavoured beer a bit of a novelty though. Vanilla? Banana? Coriander? Pumpkin? Give me traditional ale any day.

There was something with blackcurrant and another with strawberry at my local Wetherspoon's a while ago.
Interesting but, somehow, pointless.
There are enough different flavours to be explored in malt and hops for me.

use vanilla extract NOT ESSENCE!!!
'bout 170ml per 5 gal will give you a prominant vanilla profile @2%vanillan extract
the extract is normally in alcohol and sterile to begin with and is very measurable compared to steeping the pods in vodka
add to keg/bottling vat before filling with beer there is a high proportion of sugar in a lot of vanilla extract so be aware of that with your priming
or as suggested by various people earlier just steep 2-3 pods in a bit of vodka(enough to cover them and add to the beer ....)

I'd recommend pods.
Two in the boil for 5 minutes and two in the keg (if you're kegging it). Slit them lengthways and chop them into 2cm pieces.
Or make extract, as above.
