TTL boil length?
TTL boil length?
I'd love to make something that comes close to timothy taylor landlord, but I'm not sure how they get those smooth toffee caramel flavours. Most of the many recipes I've seen online don't use a lot of crystal malt, so I've been wondering if they get some melanoidins from an extended boil or if these flavours are purely yeast driven.

Don't they do something similar to Samuel Smiths. Draw off a part of the wort during the boil and boil it seperately to evaporate it down until it's almost a paste to caramalise it before adding it back?

Would not surprise me at all if they have malt made to their own specifications - especially if it's true that they use only one type of malt. I think most home brewers add a touch of dark crystal to emulate that with the malts we have available.

I thought TTL was just all golden promise pale malt?
In the recipe i use, i take the first 2 litres of runnings and boil it right down to a burnt toffee in a pan then add a little wort to it to dissolve it, then add it back to the boil.

The recipe i use has quite a big styrian hit at the end too. It's an amalgamation of two TTL recipes i've seen with the GP malt/caramelisation from one recipe and the hopping schedule from another that i read was closer to the hops in TTL. Malt:
Golden Promise 4700g
Hops:
15g Fuggles - 90min
15g Goldings - 90min
30g Goldings - 15min
60g Styrian Goldings – flameout
Mash 90mins at 67c
Caramelise 1st 2ltr of runnings.
Don't be afraid to make a mess of the pan when you're caramelising either lol

Its nice and close to what i remember TTL to be like, but I've never done the pepsi challenge with them as there are very few places you can find TTL up here in ScotlandCestrIan wrote:How didi it turn out? Did you do a side by side taste test?

This is one thing i find quite frustrating is that i have no idea which one to use for "Styrian Golding"
I've tried Bobek before and found it gave an almost soapy taste so i'm not planning on using that one in future...

When I bought hops from the Malt Miller for a TTL he recommended Savinjski, which was a good shout
