Oh No!
Today I started to make this with the addition of 100g munich, mashing today and boiling tomorrow. I thought the mash was a bit 'wet', but have just realised I forgot to add the kilo of vienna. I must be able to save it, but what should I do. Maybe a mini-mash or BIAB with some cheese cloth in a large saucepan? If so, should I use water or some of the wort I've already got? If so, how much? This is possibly the last beer I'll ever make from scratch, so I'd really like to save it.

I'd be inclined to boil it a bit longer to reduce the gravity before adding the hops. Then cut back on the bittering hops by about 15-20%. Should be fine without the Vienna. Just different from the original intent, and you'll get a few pints less than you intended.

Be reet, realistically you could have just thrown it in there without much worry if you're maashing overnight. Otherwise I just wouldn't worry about it.

You could do a mini mash in the morning. Take 2.8l of wort from your mash and re-mash the 1k Vienna in it in a saucepan or something similar. After 60 mins at 66C or so add everything back to your main mash. Are you sparging tonight as well? If not, be aware that mashing overnight you're going to lose a lot of heat and the mash bed may not flow smoothly during the sparge. In which case decoct a bunch of wort from your mash and heat to boiling before adding it back to raise mash temp.
