Quick help please?

I'm just about to start my boil on a Hophead recipe which calls for cascade 25g@90mins, 60g@5mins, 60g@flame out.

The problem i have is that i've just realised that i only bought 100g :oops:

Other hops i have in stock are Challenger, Progress, Fuggles and Bramling cross.

can anyone advise me what i could substitute out of that lot to replace the 45g shortfall in the cascade?

any other suggestions greatfully received [-o<

Use some Challenger at 60mins to get the IBUs at that stage then I would go with 60g cascade at 5mins and 40g cascade at flameout.

+2 on using the challenger for bittering. Another option would be to add some hop tea to the fermenter/keg/bottling bucket after you have bought some more cascade.

If its of use: flavour/aroma characteristics matter much more towards the end of the boil so try to use the right hops (or near relatives to them) here. Whereas full-boil hops have many of the flavour and almost all aroma characteristics boiled away, so here you're mainly looking to add enough hops of enough Alpha-Acids (%AA) to achieve the total bitterness (IBUs) you want.

Its not 'quite' that black and white IMO, but if you have to deviate from the recipe its a good rule of thumb. It mostly has to do with the difference between hop oils and resins vs boil time.
