Hi all I brewed a courage directors clone been in the barrel for two weeks tried some just now and there is an residual sweetness that you can both smell and tast any ideas ie mash temp or possibly I used bleach to do the barrel and fermenter could this be it iv moved back to my normal steriliser now any help would be welcomed. Cheers paddy.ill add iv done nothing different than to use bleach to clean stuff. ???

Residual sweetness isn't going to have anything to do with your sterilizer Paddy. Did you take gravity readings? Sounds as though your FG is a little high. :beer:

Cheers for getting back yep the fg was a bit high but it was the same 3 days on the trot so I thought it wouldn't go any lower so this is the reason right I lean from this one to leave it another week or so cheers. Paddy.

Could also have been the product of a high mash temp or the result of too much crystal malt in your grain bill for example, just a few other things to consider.

I put the right amount of crystal according to gw book but yep mash temp could well of been a bit high all a learning curve I suppose cheers mate. Paddy
